OLLI Salumeria Americana

What do you get when you combine 160-year-old family recipes handed down to a 4th generation Italian salumiere, with pasture-raised heritage pigs on family-owned sustainable farms? Olli Salumeria. Artisanal, slow-cured salumi made in Virginia, USA. Good salumi is directly affected by the quality of the pork, and they go to great lengths to obtain the best heritage-breed (Berkshire and Mangalitsa) pigs available in the USA. The pigs are humanely pasture-raised on family farms (never confined to pens or crates), and are fed all-vegetarian feeds (antibiotic-free and never fed animal by-products). The pigs are grown to mature age and weight for increased flavor (about 8 months vs. industry standard 5-6 months). Their farmer partners take a lot of pride in the way they raise their pigs. Their master salumiere, Oliviero "Olli" Colmignoli, preserves the superior quality of their heritage-breed pork by using the most gentle curing techniques possible. Nothing ever leaves our facility in Virginia without being carefully checked and approved by Olli.

Meadow Creek Dairy is a family farm in the mountains of southwest Virginia. At an elevation of 2800ft, the combination of pure water, clean air and deep soils produce an ideal environment for growing diverse, mineral-rich pastures. Since 1980, farming has been their craft. They have worked closely with their Jersey herd to give them the best care, develop the genetics best adapted to their farm, and in the process produce the highest quality milk. Now they take their craft to its next level, providing us with a full flavored, healthy, ecologically friendly cheese. Reminiscent of the Italian Taleggio or French Livarot, but with their rich Jersey milk and a longer aging time. A soft, finely textured cheese, very rich and beefy with a pungent aroma and a nutty, sweet overtone.
