SCRATCHbread is dedicated to food without pretense and Matt Tilden’s bread is simple, just four ingredient. Trained as a chef at the Culinary Institute of America, Tilden dabbed in breads and baking because he wanted to be a well-rounded cook and make sure all parts of a meal are in sync. He found bread to be such a great, simple, interactive thing and calls it one of the modest superpowers of the world. Tilden’s passion for making some of the best baked goods in Brooklyn has powered him past all kinds of obstacles. After starting out baking bread in the off-hours at Toby’s Public House and then briefly inhabiting a space in Red Hook, Tilden now has a production spot in the old Foccaccino pizzeria in Bedford-Stuyvesant, Brooklyn. Tilden pays attention to the details and devotes time to perfecting them and it shows in his oven-baked handiwork. SRCATCHbread sells out of a walk up window every Saturday, and people show up every single week for the addictive products: bourbon wheat bread, salt and pepper biscuits, pizzabread and yes, shortbread!
